Mechanical Keyboard Chatter - It doesn't happen every time, so it was making me think that I had forgotten how to type.

After some googling, I discovered that it is almost a certainly except for buckling switches and Topre switches that mechanical keyboards will face keyboard chattering. Unfortunately, warranty is only 1 year. Too advanced for me. However, it should be enough for office usage as mentioned. Unfortunately, it does not allow holding down the keys, or double tapping.
